We often get stuck when our diet which consists mostly of low-GI foods, but may sound limiting when we are told we have to stay off the mashed and roasted potatoes that we usually eat and the white breads that we are so used to eating. My thoughts are that if you can make food appealing enough and tasty with extra flavorings and a couple of spices anything can taste good.

- pasta with a spinach and tomato sauce

- wrap with grilled vegetables and feta

- moroccan lamb stew, using lots of spices and a little flour, mixing it with bulgar wheat
- rosemary chicken on skewers in a bbq marinade with stir fry vegetables
- stuffed chicken with feta cheese and a red pepper sauce
- sweet potato chips with a steak of your choice, served with salad
- fruity frozen yogurt
- lemon cheesecake using diabetic sugar and oatmeal biscuits
- chocolate mousse using diabetic chocolate
Once you have tried these out you will find making low carb meals easy as pie. Everything in life takes a little perseverance and patience.
